LOT 2 from Joya de Ceren Collection is sourced from the Ataco-Apaneca micro-region which is located at 1200 -1350m above sea level in the Apaneca-Ilamatepec Mountain Range, world famous for its specialty coffee.
This lot has been produced with plenty of care. During the harvest, the cherries are hand-picked, only when perfectly ripe. Within hours, the cherries are sent to the mill for grading. Only batches with an AA grade (meaning 95% of the cherries are fully ripe) make it to the next step, which is de-pulping. The de-pulped beans, with their mucilage are kept in jute bags overnight to promote sugar absorption. The following day, they are laid out in African - style raised beds to achieve an even and slow drying process. After 15-17 days the lots are fully dried, where-after they are cupped by the in-house Q-grader who then further selects only the best batches.
Due to the rigorous and labour intensive nature of the process, only a limited number of bags of Joya de Ceren LOT 2 are produced annually.
